Food Friday: English Scones & Perfect Pancakes

#FoodFriday this week is perfect for the most important meal of the day! Try out these Scone and Pancake recipes for a delicious breakfast this weekend courtesy of “The Cookbook According to St. Paul’s” from the Paulist Women’s Club* at the St. Paul the Apostle Catholic Community in LA.

English Scones

Ingredients:
8 oz. Flour
1 tsp. baking soda
1 tsp. cream of tartar
1/8 tsp. salt
4 tbsp. butter or margarine
2 oz. raisins
½ cup buttermilk
4 tbsp. sugar
1 egg

Instructions:
Measure flour, soda and cream of tartar into mixing bowl. Add salt. Cut in butter or use pastry blender. Add raisins and sugar. Stir. Add buttermilk and stir until a soft dough forms. 
Beat egg and one tbsp. of water.
Roll out dough to about three quarters of an inch thickness. Cut with one and a half-inch rough cookie cutter and place on cookie sheet. Brush with beaten egg. Bake at 450 degrees for eight to ten minutes or until light brown. Serves 12.

Suggestion: Scones are traditionally serves fresh out of the oven for afternoon tea. Spread with butter or jam.

Perfect Pancakes

Ingredients: 
2 tsp. baking power
1 cup sifted, all-purpose flour
1.5 tsp. salt
1 egg
1 cup of milk
1 tbsp. salad oil
3-4 tbsp. of butter or margarine

Instructions:
Sift the baking powder, flour, and salt together in a large mixing bowl. Add the egg and milk and stir until batter is smooth. Add the oil and mix. 
Melt one tbsp. of the butter on a griddle warmed with medium heat. Test with a drop of water to see if griddle is hot enough, if water drop sizzles and jumps off griddle, temperature is just right. Pour batter onto griddle, making circles of about three inches across. Leave room between circles as batter spreads out as it cooks. 
When the pancakes are full of bubbles, but before the bubbles burst, turn them over with a wide spatula. Cook until the bottoms are browned. Using spatula, remove them from griddle and stack on a plate. 
Melt a little more of the butter if necessary and cook a second batch of pancakes in the same manner as the first. Continue until all the batter has been used. Makes about 12 pancakes.
