Our First-Ever Food Friday: Strawberry Mousse!

Welcome to our first #FoodFriday!

We recently rediscovered a wonderful old cookbook on eBay called “The Cookbook According to St. Paul’s.”  It was created in 1979 by “The Paulist Women’s Club,” an organization at St. Paul the Apostle Catholic Community, the parish served by Paulist Fathers in Los Angeles.

(This same organization exists today under the name “Parents Working for Children.”)

Here is the first of many recipes we will share from this great find:

STRAWBERRY MOUSSE:

Ingredients:
1 envelope of unflavored gelatin
1/2 cup cold water
2 cups mashed strawberries
3/4 cup sugar
1 egg yolk
1 egg
1 cup heavy cream, whipped

Instructions:
Soften gelatin in cold water. Stir in thick bottomed pan over low heat until gelatin is dissolved. Mix strawberries and sugar well and blend into gelatin mixture.

Beat egg yolk and egg together until frothy. Add to gelatin mixture. Cool.

Fold whipped cream into cooled gelatin mixture very gently, but thoroughly. Spoon finished mixture into individual compotes. Refrigerate until served. Serves 8.

Suggestion: Garnish with whole strawberries and chocolate shavings. Place in cookie cups or champagne/ sherbet glasses.”
